Taco Salad

One of my favorite salads is taco salad - I love the flavors that go into this delicious treat! It is a great way to make left over taco ingredients stretch if there isn't quite enough for everyone to get full by a taco. This past time I learned a cheater way to make taco shells for this salad and I'm glad I get to share it with you! 

Taco Salad
First - make a tortilla shell (or to make it quicker use tortilla chips). To make a tortilla shell - Spray each tortilla with non-stick cook spray. Place tortillas in a bowl that is oven proof, place a piece of aluminum foil on the tortilla. Bake at 400 degrees for 10-15 minutes. (or to cut time short, broil on a cookie sheet for 1 minute on each side and press into bowl just after removing from oven.)
In tortilla shell place about 1 cup of lettuce.
Next add the meat - I like hamburger or chicken seasoned with taco seasoning.
Top with your favorite taco toppings. I like tomato and olives.

and cheese - you gotta have cheese! ;)
Top with salad dressing of your choice.
My favorite dressing to put on top of these? It is not a salad dressing!
But a 1:1 mixture of salsa (such as Pace thick and chunky salsa) mixed with sour cream. Sometimes I add milk if it is too thick.
It makes all the difference! You can also add some taco seasoning to the mixture, but it's not necessary.
