Bacon Couscous


This recipe is the first time I have ever actually made couscous (why did I wait so long?!?). It turned out very well and I loved eating this dish. It is actually better the second day as the flavors have had time to mix.

Bacon Couscous

In a saucepan over medium heat, saute 1 green bell pepper, diced and half of an onion, diced in 1 Tablespoon olive oil until tender.
 Combine 3 cups cooked couscous (about 6 ounces dry),
1/2 lb. bacon, diced and cooked, bell pepper, onion and 2 tsp parsley in a bowl.
Toss to combine.
Season to taste with salt and pepper.

Enjoy!

  1. I love cous cous when it is done right. I cant seem to make it taste interesting when I make it. Your version looks fantastic and I am sure it tasted good too.
