A few months ago, I tried stuffing cookies with various items. One of my favorite by far is rolo cookies. They are absolutely delicious so I knew I had to share these with you.
First, you'll need you favorite chocolate chip cookie recipe (mine is here.) Second, make sure you use small chips, or chop them into smaller pieces.
Third, you'll need rolos.
one per cookies, unwrapped.
Take 1-2 Tbsp of cookie dough and place onto cookie sheet.
Place rolo into center of dough.
Fold the dough over the rolo,
Making sure to cover the rolo completely.
Your hands will get messy,
so I highly suggest unwrapping all the rolos before starting..
Repeat with remaining rolos.
I only put 6 cookies on the cookie sheet.
I could also suggest cooking them on parchment paper, it will make transferring them easier!
Bake at 350 for 9-10 minutes.
They will need to rest on the cookie sheet until cooled partially,
so be sure to remove them before they are completely cooked.
They'll finish cooking on the cookie sheet.
If you do remove them before they are cooled for about 8 minutes, you'll end up with a gooey mess, still edible, but not pretty.
Remove to rack and continue cooling.
This one suffered a bit from being moved...
Enjoy the gooey centers, they really are great fresh or after a day (if they last that long!)
If you don't feel like wrapping the cookie dough around the cookie, you can just place it on top.
Don't press the rolo down into the cookie, it will be easier to move them if you don't! You can smash the rolos before putting them on the top. You can use less cookie dough this way as well.
