Peanut Butter Cup Cookies

I bought a package of mini peanut butter cups to try making cookies with them. At first I thought about stuffing them into cookies, or making a peanut butter cookie and adding them in, but finally decided to make a Peanut Butter Cup Cookie (peanut butter and chocolate) with some cups mixed in and a few quarter-pieces on top. My first cookie recipe attempt worked out great, and luckily I photoed most of the process ;). Luckily because my diet doesn't want me making these again (however I would have made them again if I didn't have the photos, as they are worth it!) The texture is like a cake or brownie (brownie if removed from oven just before they are finished and cake if they stay in the oven.) I could have eaten this whole batch... and I'm not the hugest fan of Peanut Butter Cups.

Peanut Butter Cup Cookies
First you'll need 3 oz cream cheese, softened and 1/2 cup natural peanut butter (you can use another type, but may need to adjust flour amounts.) Mix until combined.
1/2 cup brown sugar
1/3 cup honey,
Mix for 1 minute.
Next, add 2 eggs and beat until combined.
Next, you'll need 1/2 cup cocoa powder (I used 1/4 regular and 1/4 cup dark.)
also mix in: 1 tsp baking powder, 1/2 tsp salt
and finally 1-1/2 to 2 cups flour, mixing just until combined. The dough will be thick. Toss in 1/2 cup peanut butter cups and mix until combined (I cut mine in half and they broke up while mixing.)

Shape into balls, then flatten and place on a cookie sheet.
Top with 1 mini peanut butter cup, quartered.
Bake in a 350 degree oven for 8-10 minutes.
Remove and let cool.
Enjoy!
