Kitchen Tip: Potatoes

Simple tip: don't eat green potatoes (note: this picture does not show green potatoes).
The green coloration is caused by a chemical called Solanine. It is produced when the potatoes are exposed to sunlight and can also occur from the florescent lights in stores. Solanine in large quantities is toxic. If you do have a potato with green on it, cut it out. It won't kill you unless you eat a lot, but why add toxic substances to your body?
