Today has been a crazy day! I've actually been researching (by reading actual books!) about birds... it's been fun. I actually love this pizza recipe that I'm going to be sharing with you today. I got the idea from a pizza I ate at Ian's Pizza. If you want some interesting pizza flavors, you have to try some that they have. Their pizzeria has it so you can try it by the slice or order a whole pizza. My husband and I went there and I got their Spinach Feta Pesto Pizza while he got their Mac & Cheese Pizza. We decided that Mac & Cheese pizza should be eaten fresh not from under a warmer... I also think my husband liked it more than I did - I am not a huge fan of pasta on pizzas. Their Spinach Feta Pesto Pizza was pretty good, but I added some tomato slices to this pizza, but you can leave them off if you want. The next time I make it I want to slice some garlic cloves really thin and put them on the pizza, I may add some onion as well. We'll see, maybe I'll just leave it as I made it already, but probably not.
Pesto Pizza
First make a pesto sauce
Combine Basil, Parmesan Cheese,
Pecans (I use pecans because I'm not a huge fan of pine nuts and hubby is not a fan of walnuts),
2 cloves crushed garlic and olive oil in food processor or blender.
Once it is chopped a bit, scrape the sides,
continue blending until finely chopped.
Spread pesto evenly over pizza dough.

Sprinkle with shredded mozzarella cheese.
Top the mozzarella with spinach, sliced tomato, and Feta cheese.
Bake in a 400 degree oven for 15-20 minutes or until cheese is melted.

I never knew that putting pasta on a pizza was a thing until recently, when my husband came home from work raving about a ziti and meatballs pizza he and his work buddies had had. It blew my mind, just in concept - I haven't actually tried it yet.
