Chicken Salad Sandwich

About 2 or 3 weeks ago my husband requested that we have Chicken Salad Sandwiches. I really do love these sandwiches. About 6 years ago I went through a time where I ate these almost every day for lunch. Although I have definitely improved on that version! Each time I make Chicken Salad Sandwiches I make them just a tad different, but I have a few of my staples that I always use (unless of course I'm out of that ingredient.)

Chicken Salad Sandwich

1 cup diced chicken
1/3 cup each: diced celery, apple, cucumber, bell pepper (red and/or green)
1/4 cup diced green onion
1/4 cup dry roasted sunflower seeds
1-2 Tbsp Mayo
1-3 Tbsp plain yogurt (or sour cream)
dried cranberries
lettuce
sliced bread

Combine the chicken, celery, apple, cucumber, bell pepper, green onion, sunflower seeds, mayo and yogurt in a bowl, toss until coated. Add the Mayo and yogurt to taste - more if you like it creamier, less if you want it just coated. Place a lettuce leaf on a slice of bread and top with chicken mixture. Sprinkle with cranberries, top with another slice of bread. Enjoy!

Realization

Today I realized that I am not enjoying posting about my goals, I actually dread it. So I had a great thought - I'm not going to do it anymore. Instead I'm dreaming up another use for my Wednesday posts. Hopefully I'll have it all thought through by next week so I can start it. I'm thinking about doing posts about cooking/kitchen tips. Just not sure how I'm going to organize it yet.

Menu: June 14-20 (Better late than never...)

Saturday afternoon our neighbors just down the road decide to dig up their yard to put in a sprinkler system, and I probably would not have given this any thought in the future except they cut the phone cable. So all weekend we only had cell phone use, no land line, no internet. I'm not one of the super fancy cell phone users who accesses the internet from a phone... the screens are just too small for me to want to bother with - and that's pretty much the excuse I will be using for years to come I'm sure. We did get our phone and internet use back this evening (and then I made dinner and put my son to bed...)

Oh and for those of you who noticed that I missed posting on Friday, I'll be writing about last Friday this Friday. I honestly thought of trying to include more Fridays in the previous sentence, but decided against it - I really should not try to be clever at 11PM. 

Our Menu:

Monday: Turkey Avocado Sandwiches (same as the Chicken Avocado Sandwich only with turkey instead)

Tuesday: Turkey Salad Sandwiches (Final Photos only)

Wednesday: Chicken Salad (just a plain salad with breaded chicken - I did use home made Italian herb bread so it was really delicious!) No pictures sorry

Thursday: French Toast (picture & recipe: French Toast Bites) - I made the French toast with cinnamon bread and it turned out great. Poll recipe - Bread Tutorial - Step By Step Pictures

Friday: Kabobs - I must be cursed with Kabobs I never manage to get pictures of them! I marinated chicken in Italian Dressing - it is an awesome marinade for grilling and kabobs.

Saturday: Grilled Hamburgers (again... no pictures just plain grilled hamburgers.)

Sunday: Slow Cooker Roast

Chicken Avocado Sandwich

Due to a poll malfunction in blogger, I did not get to see the final totals of the poll so I will have to go off the last tally I saw which named this sandwich as the winner. For those of you wishing to see the chicken salad sandwich I made a turkey version this week so it will be in the running next week in the poll (of if blogger is still having issues we'll just do comments instead.)

This sandwich was inspired by a sandwich I had at Atlanta Bread Company called California Avocado - which is actually vegetarian... but obviously I added chicken to this one. After we ate it, I looked up what was actually on the California Avocado Sandwich and it turned out that there were only three items in common - lettuce, tomato and avocado.

Chicken Avocado Sandwich

2 Bread slices - I used Black Pepper Pullman Bread (This sandwich does deserve a seasoned bread instead of plain white bread...)
Avocado Mayo - 1 Tbsp Mayo mixed with 1 tsp mashed avocado 
1 leaf of lettuce (I used Romaine)
Red Onion, sliced and separated into rings
White button mushrooms, sliced about 1/8-1/4 inch thick
Sliced tomatoes (I used vine ripened tomatoes)
Avocado slices
Sliced Chicken Breast (I cheated and used a store bought rotisserie chicken mesquite flavored)

Spread mayo on bread slices. On bottom slice of bread place lettuce, top with onion, mushroom, tomato, avocado and chicken breast. Top with second slice of bread. Enjoy!

Goals - June 16-22

Here's my goals from this past week:

Sugar Intake Reduction - Did pretty well until we had a lemon blueberry cake and it was way too good.

One New recipe per week - I created a simple, easy dessert which I'll be sharing next week.

Exercise  - I varied my exercise this week - I did some major weed removal and walked a lot, I only did an exercise video once.

Read 1 good book per month - I need to find another book to read for this month.

How are your goals coming?

Menu: June 7-13

 We had a lot of sandwiches this week! They were all DELICIOUS. Honestly I love sandwiches, and I especially love it when they are outside the 'norm'. The sandwich we had on Saturday night was inspired by Atlanta Bread Company's California Avocado Sandwich (with obvious differences such as chicken...) It's been over a year since I've had it so it was a distant memory but I remember really liking it. Looking at what is on it today - the only items it has in common are lettuce, tomato and avocado. Both are still really good!

Here's our weekly menu:

 Monday: Grilled Cheese Sandwiches, Steamed Broccoli & Fruit Smoothie

Tuesday: Frozen Pizza (ran a lot of errands...)
Wednesday: Chicken Taco Salad

Thursday: Dinner with my local church women's group
 Friday: Chicken Salad Sandwich
Saturday: Chicken and avocado Sandwiches (These sandwiches and the hotbrowns were made with Black Pepper Bread. Note: 1/4-ounce active dry yeast is 2-1/4 tsp.)
Sunday: Kentucky Hot Browns (My verdict: if you have leftover turkey it may be worth it but cooking the turkey and making these in the same day is too much work!)

What tiredness can do to you

Last night we forgot to give my son a snack before bedtime... this usually equates to him waking up in the middle of the night hungry and ready to play for about 2 hours = not fun for mommy or daddy. Last night was no exception, come 1:30 he woke up and wanted to eat and play. We kept the lights dimmed so he would know it was still night and all that jazz, but also fed him and let him play and get out excess energy for a bit (when we tried to lay him down he just started screaming.) During that time Hubby and I talked and I can't remember the context but since I was so tired I totally mixed up two sayings to come up with:

"We could bite two stones with one bullet."

Yeah, doesn't make too much sense to me either, but we had a good laugh!
