Here's my goals from this past week:
Sugar Intake Reduction - I did not count Mothers Day (it was a no guilt day for me) but I did pretty well for the rest of the week.
One New recipe per week - I made gorditas this week for the first time. Yum.
Exercise 3 times per week - Doing well with my 3 times, trying to shoot for 5 now. I did pretty well last week, I exercised every week day.
Read 1 good book per month - Reading Mary Poppins, it is interesting to read the book that inspired the movie after having seen the movie so many times.

Menu - May 3-9
This past week we finished off all of the extra Chinese Dumplings I made the week before! I also am getting into more of a Mexican cooking mood... I still have at least one more recipe that I want to try from that area of the world.
On another note, I hope all of you who are mothers (or are mothers to be) enjoyed your day yesterday! I had a pretty good day, I had fun with my son. We made banana cream pudding (from a box) together. He really enjoyed eating it:

Sunday: Roast with Wheat Rolls (FPO) and Lemony Carrots (I made this dinner for my mother)

Foodless Friday: Happy Mother's Day
This is the second year that I have been able to celebrate Mother's Day as a Mom. Since becoming a mom, it makes me appreciate how much my mother actually did for me (and still does.) Thanks mom for all you do/have done.

Tuna 'Burgers'
I made these for someone back in January and had my husband try them and he actually liked it, so I knew it was a keeper. I don't know what made me wait until just last week to finally make them again! Hubby still liked them (which is a great thing since he doesn't really like to eat anything that lives in water.) My father also ate it and did not know until afterward that they were made out of tuna fish - I'm sure I told him, but he has hearing loss so things escape his hearing quite often!
I would suggest trying these on anyone that doesn't really like tuna fish, but if they absolutely hate it, well - I leave that to your discretion. My dad
I'm going to get on with the recipe now before I get myself into trouble.
Tuna Burgers
In a medium bowl combine 1/3 cup minced onion, 1/3 cup minced celery and 1/3 cup minced green (or red) bell pepper,
1/4 cup mayo (you can also use sour cream or plain yogurt), 1/2 tsp dill weed, 1-3 dashes Worcestershire sauce, dash hot sauce (if desired),
1 can Tuna Fish (5-6 oz), 1/4 tsp salt, 1/4 tsp black pepper,
1/2 cup dry bread crumbs (either regular or Italian seasoned), and
1 egg (there are two in this picture because I doubled the recipe.)
Mix thoroughly. Form into patties (about 1/3 cup mixture per patty for 4 patties.)
Heat 2 tbsp oil in frying pan.
Cook over medium to medium high heat for 4 minutes on each side.
Once each side has cooked for 4 minutes, remove from pan. (If it weren't for the eggs, you wouldn't have to worry about cooking it through.)
Serve immediately.

Goals
Here's my goals from this past week:
Sugar Intake Reduction - I overindulged eating some cookies this week, but other than that I've done pretty well.
One New recipe per week - I made Chinese Dumplings for the first time this past week.
Exercise 3 times per week - I'm pretty much back into my pattern of 3 exercise videos per week - this week I'm trying to increase the videos to 5 times per week. I still need to do better with afternoon walks.
Read 1 good book per month - Haven't selected the book for this month, yet.

Menu - April 26 - May2
Today's post is a little later than I wanted it to be... my son fell and cut his lip. He has quite a beautiful fat lip (it was/is so sad!)
Last week I decided to try a few Chinese recipes that I've always wanted to make. I bought the ingredients I needed and so we had Chinese food from Thursday to Sunday. I've decided that it takes some work to make Chinese food if you don't have a food processor and finely chop 5 cups of cabbage by hand!
I'm continuing my trial of putting a three letter code after each entry to let you all know if I have step by step (SBS) photo directions or if I have final photos only (FPO).
Here is last week's menu:
Monday: Tuna 'burgers' SBS- My husband actually liked these! (He doesn't really like fish or any seafood for that matter...)
Tuesday: Broccoli Roll - FPO
Wednesday: Ate out - we did fast food because we were both pretty hungry - I got a jr. bacon cheeseburger, baked potato (sour cream & chive), and a side salad with a water to drink. I would have gotten a large salad but the two that did not have fried chicken both had blue cheese which I'm admitting I really do not enjoy the taste.
Thursday: Vegetarian Spring Rolls - FPO
Friday: Mongolian Barbecue (FPO) and Chinese Dumplings (SBS)
Saturday: Chinese Dumplings (SBS) and Sauteed Veggies over rice (I did not realize how many dumplings the recipe made... we will be having these for lunch for a couple of days!)
Sunday: Chinese Dumplings (SBS) and Steamed Asparagus with rice (My mom and I picked asparagus earlier in the afternoon for this dinner - fresh picked asparagus is wonderful!)
