Tin Foil Dinners

When I was a teenager our local congregation had a mother daughter overnight camp-out. My mom, little sister and I all went and had fun. Each Mother/Daughter combination was responsible to bring their own dinner - we brought stuff for Tin Foil Dinners. Once they were cooked we started our dining experience in the mountains surrounded by trees. I started by eating the potatoes and was saving the carrots and hamburger patty for last... when all of the sudden my little sister stole my hamburger patty! She has always been a tease, and it was just funny to see her stealing my food. I think that is one memory I'll always go back to whenever I eat these.

Tin Foil Dinners

For each you will need:
1 hamburger patty
1 potato, cut into slices
12 baby carrots cut in half or 2 whole carrots, cut into slices
1 round slice onion (I like to use red) cut in half.
salt & pepper
1 Tbsp cream
Aluminum Foil
Place one rectangle of aluminum foil on workspace.  Rub with butter or spray with non-stick cooking spray in a circle in the middle of the foil. Place half of the potato slice on the greased spot. Top with half of the carrots and half of the onion. Sprinkle with salt and pepper. Drizzle with 1/l2 tbsp of cream.
Place hamburger patty on the onion. Top with remaining onion, carrot and potato. Before adding the potato sprinkle with salt, pepper and cream. Spray non stick cooking spray or smear butter onto the potato. Wrap the aluminum foil around the food. If needed use another rectangle of foil to rewrap.
Cook for 1 hour in a 350 degree oven or on hot coals (either hot briquettes or warm coals from a campfire), turning after 1/2 hour.

  1. My dad use to make tin foil dinners. Always one of my favorite meals growing up. I should revive the tradition for my children!

  2. Coming from mmb. I love the idea of cooking these in the oven. I had never thought of that, only while camping over a fire.
