Pineapple Chicken Fajitas

If there is something I love it is fresh veggies and fruit. I love them fresh and I love cooking with them. Recently I bought a pineapple, and the night afterward I wanted to make fajitas. It just naturally follows that I made Pineapple fajitas. I'm also trying to clean out our freezer and we had 2 chicken breasts left over from some other meal that we did not need them, so I took them out as well.


Pineapple Chicken Fajitas
Get your mise en plac.
Cut 1 red bell pepper and 1 green bell pepper into strips (you can also use a yellow pepper if you would like.) 
Slice one red onion as well. Cut a fresh pineapple into strips (about 1/2 to 1 cup of strips - if you do not have a fresh pineapple, you can use 1/2 to 1 cup of pineapple chunks.)
Cut two chicken breasts into strips. 
Heat about 1 Tbsp olive oil in pan over medium to medium high heat.
Add chicken and cook until done, turning once or twice.
While chicken is cooking, combine: 1 Tbsp corn starch, 2 tsp chili powder, 1 tsp paprika
 1 tsp salt, 1 tsp sugar
1/2 tsp onion powder, 1/4 garlic powder, 1/4 tsp ground red pepper, and 1/4 tsp cumin. (This seasoning is a basic fajita seasoning and can be used with any fajitas.)
Add 2 Tbsp seasoning to chicken, remove from pan.
Add sliced peppers and onion to pan and cook until crisp tender.
While peppers and onions are cooking, combine the following: 
1/3 cup water, 1 tbsp honey, 1 Tbsp dried parsley, 1 tsp garlic powder, 1/2 tsp salt and the remaining fajita seasoning.
Add seasoning to veggies.
As well as the chicken and pineapple.
Combine and heat through.
Construct your fajitas. I spread sour cream across the tortilla, then place the fajita filling,
and top with cheese. Mozzarella cheese works wonderful as well as cheddar.

  1. What's a good price to buy a fresh pineapple at? A place here currently has them for 99 cents a pound but that equals like $5 for one pineapple...is that really worth it? If I find a good coupon I could get a couple cans for like $1. What do you think?

  3. The pineapple that I bought was at $0.79 cents per pound. I usually try to only pay at most $3-4 for a pineapple. Definitely use canned if you can get it that cheap.
